Avid runner and triathlete Elizabeth Stein started the natural foods company, Purely Elizabeth, by applying a lesson learned from racing: you can do anything if you just take things one step at a time.

From her office in Boulder, Colo., Elizabeth shared her running tips, secrets for work/life balance, and discussed Purely Elizabeth’s support for the fight to end breast cancer.

How long have you been a runner?

My first marathon was in Montana in 2007. I was never a runner before that, but once I proved to myself I could complete one, I was hooked. And then I started doing triathlons as well.

So much about long distance races and training for them is mental. It seems overwhelming, but if you just break training down into steps, it’s doable. That same thinking is what helped me start Purely Elizabeth.

What’s the best running fuel?

I always eat oatmeal before a race. For me, it’s the perfect thing because it’s not too heavy or sweet and it has the perfect amount of carbs to get me through a race. Sometimes I’ll swirl a little nut butter into it, too.

Overall, a clean, anti-inflammatory diet is the best thing. Strive to get rid of wheat, dairy and processed sugars. Omega 3s are also important; they help fight any inflammation that builds up in the body.

You can really feel bad food in your body. It doesn’t feel good.

How do you unwind?

Cooking is super relaxing and meditative.

How do you find time for fitness?

I’m a morning person, and I know if I don’t wake up and work out in the morning, my whole day is not going to run as smoothly. I’m fortunate to live about a mile from the mountains, so that makes it really easy to get up and run or hike.

Best advice you’ve ever received?

You can do anything you put your mind to. It’s all about prioritizing and focusing.

You recently partnered with the Edith Sanford Breast Foundation. What drew you to their mission?

Edith Sanford’s approach to breast cancer really makes sense to us. They’re not only advancing research, they’re working to empower women to live a more all-around healthy, preventative lifestyle.

Good health begins with what you put in your body, so we feel like the partnership can make a real impact and we’re proud to be part of TeamEdith!

Why is the cause so important to you?

We’ve all been impacted in one way or another by breast cancer, and we all have a role in stopping it.
